For the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Premix (produces 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Method

Making the Cordial: Place the listed components into a pot, bring to a light boil, stirring to dissolve. Then, remove from the stove allowing it to reach room temperature completely. Pour to a sterilised bottle, cap it keeping it in the refrigerator, where it will keep for about one month.

To make Batch Mix: Pour all the liquids into a large bottle, allow it to infuse for an hour, then pass it through best through a fine cloth, so it's fully clarified.

For serving: Add 85ml of the batch mix into your stirring glass packed with ice, and agitate gently for about 60 seconds to chill. Strain into a cold coupe glass or equivalent, top with some cranberries and finish with a light spray of the essential oil over the drink.
